Potato salads are always popular at barbeques and family gatherings, each version with its own special twist to the basic recipe. I often find myself dissecting potato salads to see what special ingredients it might contain to make it stand-out from others. Perhaps, it's the chopped egg or crisp pieces of bacon or the finely sliced spring onions amongst a multitude of variations. Well, this version tastes and looks fantastic with the pink hue over the potatoes and the delicious hint of horseradish as a contrasting flavour to the beetroot. Prosciutto, Cantaloupe & Beetroot Salad
Cantaloupe and prosciutto are one of Italy's greatest marriages and together with the beetroot make a wonderful family. This is a great dish to serve to family and friends for summer entertaining, and has been labeled as a family favourite for an entrée at our Christmas Dinner. It presents beautifully on a large platter for an informal get together, and for some strange reason it always reminds me of summer!

I especially love that the marinating oil from the Persian feta is used in the dressing, so be sure to select a good quality Persian Feta.

Pumpkin, avocado and beetroot are a great combination of flavours, and together with the basil and red wine vinegar dressing, they make a truly delicious salad. I love to serve this salad with a leg of roasted rosemary lamb, or quite simply on its own as a starter to a meal.
