Baked Apples with Fruity Stuffing
This simple dessert reminds me of cooking with my dad as a child. He always used to add raisins to his baked apples, but this version is just so delicious stuffed with pecans for added texture. Pink Lady apples are a good crunchy variety that hold well during baking and caramelize beautifully, but you could also use Lady Williams, Golden Delicious, or even tart Granny Smith apples if you prefer. And, if my childhood memories serve me right, then creamy custard is a must for serving.
